Orange And Almond Pilaf

Ingredients

  • 500g basmati rice
  • 50g chopped almonds
  • 100g orange peel, finely diced
  • 2 large onions, diced
  • 1/2 Teaspoon saffron
  • 1 Teaspoon salt
  • 1/2 cup of chicken stock

Instructions

Soak rice in warm water for one hour, and soak almonds in cold water for one hour.

Drain and rinse rice using warm water, boil water, add saffron and salt, and cook rice in pot until rice is half cooked.

Drain and rinse rice again using warm water, then re-add to pot, add 4 tablespoons of cooking oil, cover pot and and cook under medium low heat for 20 minutes.

At same time, brown onions until golden, then set aside.

Remove 2/3rds of rice from pot and set aside. Add half the onions, almonds and orange peel to the pot, then add a layer of rice, then add the rest of the onions, almonds and orange peel, and cover with remaining rice. Add chicken stock, cover pot and cook for 20 minutes.

Serves 4.
